The introduction of the flour-made food engineering center
Henan provincial flour-made food engineering research center was founded in 2004, and it is the only professional domestic flour-made food research institute. The main projects of this research center are--- revealing the corresponding relationship between the traditional flour-made food and domestic wheat; ameliorating the processing techniques and equipment; carrying forward Chinese flour-made food industrialization.
 
Engineering center-basic research
The basic research of the engineering center is mainly carried out by cereal chemistry research department and practical mechanism department. They have gradually built a wheat database for further researching the relationship between wheat and flour ingredients and the corresponding relationship between flour and flour-made food. And based on the five ingredients research, they have researched starch’s ingredients, starch’s aging and a corresponding evaluation syste
 
Engineering center—practical research
The practical research is mainly carried out by staple food research department. And they mostly research Chinese traditional flour-made food which is represented by mantou and noodles.
